Pigs’ feet

Salt and pepper

Allspice

Vinegar to serve

Cook the feet till very tender; remove all of the bones and season with salt and pepper, and a small amount of allspice; pack in a crock and put a heavy weight on; let remain several days before using. Serve sliced in vinegar.
